I had one very intreresting story from my friend you all might enjoy as well, as following;
수작(酬酌)'이란 ?
멀리서벗이찾아왔다/ 얼마나 그리웠던 친구였으랴. 두 친구가 주안상을 마주하고 술부터 권한다.
“이 사람아~ 먼 길을 찾아와주니 정말고맙네. 술 한잔 받으시게"
“반갑게 맞아주니 정말 고맙네 그동안 어떻게 지냈는가?”
이렇게 잔을 주고받는 것을 '수작(酬酌)'이라고 합니다.
왁자지껄한고갯마루 주막집 마루에 장정 서넛이 걸터앉아 주안상을 받는다.
한잔씩 나눈 뒤 연지 분 냄새를 풍기는 주모에게도 한 잔 권한다.
“어이! 주모도 한 잔 할랑가?” 한 놈이 주모의 엉덩이를 툭 친다. 이때 주모가 허튼 수작(酬酌)말고 술이나 마셔~"한다.
수작(酬酌)은 잔을 돌리며 술을 권하는 것이니 '친해보자'는 것이고, 주모의 말은 ‘친한척 마라. 너하고 친할 생각은 없다’는 뜻입니다.
도자기병에 술이 담기면 그 양을 가늠하기 어렵다. 병을 이정도 기울여 요만큼 힘을주면...' 하며 천천히 술을 따른다. 이것이 짐작(斟酌)이다. 짐(斟)은 ‘주저하다’ 머뭇거리다’는 뜻이 있다. 따라서 짐작(斟酌)은 '미리 어림잡는 것'입니다.
무슨 일을 할 때는 우선 속으로 어떻게 할것인지를생각한다. 이것이 작정(酌定)입니다.
작정(酌定)'은 원래 '따르는 술의 양을 정한다'는 뜻에서 나온 말입니다.
무작정(無酌定)술을 따르다 보면 잔이 넘친다.무성의하고 상대방을 무시하는 무례한짓이될수있다
아무리 오랜만에 찾아온 벗이라 해도 원래 술을 많이 못하는 사람이라면, 마구잡이로 술을 권할 수는 없다.
나는 가득 받고, 벗에게는 절반만 따라주거나 해야 할 것이다.
이처럼 상대방의 주량을 헤아려 술을 알맞게 따라주는 것이 '참작(參酌)'이다.
판사가 형사피고인의 여러 사정을 고려해서 형량을 정할 때 '정상 참작 (情狀 參酌)해 작량감경(酌量減輕)한다'
라는 말을 쓰는 것도 술을 따르는 것에서 유래된 것이라 하니 술 한잔에도 여러 의미가 있음을 알고 마시면 좋을 것 입니다.

P.S. In regard to the wine business, wherever I go - used to visit European countries for example to deliver the lectures at least three times per year through these many years!- I always wind up encountering this wine issue so that I studied with the wine books as well as the lectures but actual tastes and the knowledge learn from others are two different matters, which I belatedly learned. And slowly learned how to enjoy it but honestly I don't care much about the name and as long as the taste is agreeable, I buy the same kind of brand if available! So, just like you, I choose Chardonnay for the white wine and Merlot if not Cabernet Sauvignon for the red for my own consumption at home whenever I encounter unknown wines at the grocery store. Indeed I don't dare to go to the wine store too often unless I do have to get one to visit the friends!
As matter of fact, whenever I pass by Fort Lee- I extend my annual trip to New York every year a week before Thanksgiving Holidays to visit my second daughter's family to Boston after I deliver my lectures to VEITH Symposium!-, I stop by to HongBinn's wine store and ask the manager to select a dozen different varieties of wine to make a handsome gift to take up to Boston. Indeed, I also order/make a couple more boxes to take home to Washington to give away to my first daughter's and friends as Xmas gifts and also taste them myself and it is really fun to try many different kinds of grapes the professional choice for me!

As a matter of fact, I was quite amused to watch Japanese drinking custom, much more complicated than ours though heard Chinese also has similar custom.

Precisely, Dr. Ohn! More you look into what we use daily, more surprised to find out many are actually Chinese words.
We all know, 대변, 소변, 변소 are Chinese words but I was surprised with the word '통시' which I thought 영천 사투리 but confirmed as Chinese while I made a visit to Chongqing years ago!

There are good possibilities in which some Korean 토종 단어 might have been re-written
into Chinese letters as the Chinese system was so popular and dominant in the old days.
It's not only "Chinese to Korean conversion" but also the possibility is also great
in "Korean to Chinese conversion".
Please don't overestimate the Chinese influence. The change (or conversion) happened in the land of Korea.
Therefore the influence of the Korean language might have been much greater.
It makes me sick to see your one-tract-minded way of thinking in Chinese superiority.
A lot of Chinese phrases might have been originated from Korean phrases. Why not??

We don't carry Chinese poems in order to promote blind respect to the superiority of Chinese poems.

No, I am not a blind admirer of Chinese letters nor a slave to Chinese culture! But I accept Chinese letters as a part of Chinese civilization like the Latin language to Western culture/civilization. As a self-claimed intellectual of Asian origin, I proudly show up how much I know about Chinese letters - as a part of the preparation for my SNU Graduate School exam for Ph.D., I reviewed 3,000 original Chinese characters/letters to claim as an intellectual - as the base of Asian civilization whenever I encounter!
So, I envy the Chinese on their vast cultural background with such rich history they only have and also try to enjoy their unique literature especially their exquisite poems deeply linked to their history, no more no less!
Indeed, I am a proud Korean with dignity - remember we had not only 사육신 but also 생육신 to show Korean gutsy spirit! No other human history would have an equivalent story as I know of (perhaps, Chinese?) - especially in these days watching such cowardly Republicans lined up to lick this mother fucker's shoes.
As KwanHo once introduced/brought up to this website, my mother was happened to be such staunch patriotic activist - I believe she received quite a few awards and even once nominated as a living treasure to lead pure Korean culture/poem, know as 시조-, who spent her entire life to dedicate to dig out often intentionally ignored/suppressed pure Korean culture represented by 언문 to get the public recognition as pure Korean culture/words. She vehemently fought to preserve pure Korean words and also collected forgotten 조선말 through 내방가사. So that is one of the reasons why I am particularly interested in 경상도 사투리 from such linguistic point of view.
Anyhow, I also heard exactly the same criticism on the intentional interpretation of pure Korean words/expressions to fit Chinese alphabets to make it look like Chinese origin and indeed some are very likely to look suspicious especially among 경상도 사투리! And they might as you correctly pointed out.
But we have no reason to deny or feel shameful of the reality that over 90% of Korean custom and culture we know of are based on Chinese civilization, and borrowed from them like all other East Asian countries like Japan or Vietnam. Instead, I rather feel shame on the reality that, sadly, Yi Dynasty spent full 500 years to make a carbon copy of Chinese culture except for a new creation of Korean-unique alphabets/한글 while the Japanese did spend more time to create such vast cultures of their own based on Chinese culture they also borrowed like us/Korea.
Now, the whole world recognizes not only the value of unique Japanese painting which already became the base/motivation for Impressionism centuries ago but also unique Japanese music incorporated into a theatrical activity like Kabuki besides the infamous Sumo we all know that!
Hope a new Korean generation would be more creative than the old one to be proud of!

Dear BB: 나는 처음부터 자네 글이 아니라고 생각했다.
자네가 이 정도로 주도(酒道)에 통달했다고 믿지 않아서, 한번 읽은 후에 다시 올려보니,
아니나 다를까 친구의 글을 퍼왔군. 나도 술에 관해서 아는게 별로 없지만,
우연한 기회에 어떤 Surgeon으로부터 Wine drinking배웠지. 그것도 거의 20년 가까이 걸렸네.
그래도 내가 영 진도가 나가지 않아서, 사람들만 모이면, "이건 내가 Kwan에게 맛보였고,
지금 다섯번째 먹여도 아직도 그맛을 잘 알지 못한다." 하여서 모인 사람들로부터 폭소를
받았네. 그 후 그 다정했던 Dr. Harold Stopp은 떠났고, 나는 가끔 그를 생각하면서 저녁때
Californian Chardonnay Sauvignon을 조금씩 기우린다. 그들은 "Dry," or "Tart"하고 주고 빋지만,
그걸 모르면 어때? 내 식대로 Steak이나 Sea food를 먹을 때 조금씩 마시면 기분이 좋다.
