Dr. Choh, love your version of Hamlet which is funny and well done.
..........."The old saying, we are what we eat, is true. Every cell in our body was created from the food we eat, the water we drink and the air we breathe. In addition to nourishing our bodies, food also affects the quality of our lives, our appearance, moods, weight, energy, the aging process and our overall health and well-being ......."
This is from one of articles I read, which rings true especially for those of us in medicine.
Paul Dudley White who founded American Heart Association once said decades ago,
"One needs to eat poorly to live richly."
I used to tell my heart patients,
"Foods are like medicine. You need to select the right ones and eat right amounts."
It is a fact, as you said, my class of 65 did not see a single Korean patient with coronary heart disease
during our two years' clinical rotation at SNU Hospital in 1964 and 1965.
The cholesterol level of average Korean man was around 140
then, and now is about 220 last time I read some years ago.
Your listing of those CVD, chronic diseases and cancers are now, I believe,
more widespread in Korea than in USA.
As it took decades to educate the public here in America regarding heart disease, etc.,
I am sure it will take many years to do the same in Korea.
Indeed the process is worldwide through UN and other international organizations and will be going on indefinitely.
"Those who have ears and eyes hopefully will learn to hear and see."
And as you said it honestly, that also includes me to be honest.

Paul Dudley White,Pioneer cardiologist,Pioneer preventive cardiologist(WPW sysndrome,Lee-White clotting time....)took over the care of President Dwight Eisenhower, after the famous 14 billion dollar heart attack(the diagnosis delayed...the stock market crashed) in September 1955. He ,himeself,an avid exercise(daily walking, bicycling) advocate, was not successful to convince to change the dietary and smoking habbit(4 pack/day) of the most famoust patient, even after the more heart attacks and small bowel operations for Crohn's disease.
After a heavy evening dinner with pig knuckles(족발) and souerkraut(salty),when a physician asked accusingly the retired president ,"why did you eat like that?". The retired president's answer: "Because I like it, darnit!".
These epitomize bad health-effects of the American diet, smoking habbit ,common during those years ,and the diffculty to effectively change patients' bad habbits.
In our society, we talk a lot about foods as if they have direct relatioship with our general health and logevity.
Some people even claim that our "gut" controls everything including our thinking, health, and even cancer.
By eating certain things or eating properly, they can cure even cancer, coronary heart diseases, diabetes,
and liver cirrhosis. My view is that no foods or anything through the mouth have any magical effect on our health.
I really don't believe these nutrionists, Chinese doctors, rumor, periodic fads, or snake oil dealers.
I don't think we can solve all or any medical problems by eating in certain way.
Eating is only good for hunger and culinary satisfaction.
